Interesting.  "Pork neck" is not a cut of meat we see around here.  Lots of pork in general, but not the neck.

I've personally never seen it before either,  but when I saw it I thought why not try it! The nice thing about it is the fact that the meat is marbled, so it's very tasty and there's also not too much fat! (I generally don't eat pork, unless it's bacon!)

Also known as Pork Neck, the Collar Butt is from the prime part of the shoulder between the neck and the loin. Due to the intense marbling, it is a succulent cut and well suited for slow cooking methods such as smoking, stewing, and braising.

It didn't include the head, but roast goose used to be a lot more common than it is nowadays.  My grandparents would serve them for the holidays before roast turkey became common.  But that was before my time. 

When having roast turkey, my grandfather's favourite part was the neck.  Grandma would put it at the side of the serving platter and make sure everyone knew it was for him only.  Nobody ever argued about it though!

I don't see a point in eating organ meat or anything super strange unless I'm hunting and butchering my own food. As I don't do that I don't understand the Chinese obsession of head on Beijing duck or anything like that. Nobody wants to see a fucking head on their roast duck. I'm not a goddamn butcher so I try to buy pre butchered food as much as possible.

Sure it's not as "exotic" to see a chopped chicken thigh stir fried with black vinegar and dark soy, peanuts, leeks etc. but it's just as authentic as some boar head with boiling broth coming from it.

Umm, nope, and nope. There's at least 1.2 billion people who would argue with you about sentence two, and if you even tried sentence four around here they'd run you out of town on a rail. You and I and Charlie Fizzlebottom don't get to decide what's authentic. The people who live here are in charge of that.

All that aside I was kinda pulling JP's leg, I didn't expect him to dig into a nice plate of spicy chicken feet anyhow :-) Goose is okay, kind of like an all-dark-meat turkey. I like pigeon better tho. Speaking of which, spring festival is almost here, maybe something new to try !

Instead of purchasing it at a restaurant, as I usually do. Today I decided to make my own Homemade Eggs Benedict!

It Consisted of a Bagel Toasted on the cut sides topped with a slices of Provolone Cheese, Kessler chops (as I prefer them to straight Bacon), Roasted Bella Tomatoes roasted together with Garlic, Olive oil and Mixed Italian Herbs, Water Poached Eggs, Homemade Hollandaise Sauce topped with Petite Herbs!

Ingredients you'll need:

1 tspn Vanilla
150g Light Brown Sugar
50g Caster Sugar
120g Salted or Unsalted Butter
200g Lindt Dark Chocolate (60-70% Cocoa)
55g Cake Flour
35g Cocoa Powder
Lindt LINDOR Milk Chocolate (I used 9 of them)
